Ingredients:
4 beetroots – cooked, peeled and sliced (or julienne cut)
3 oranges – peeled and sliced
100g goat cheese – crumbled
200g mixed leaf salad – washed
45g (1/3 cup) pine nuts
For the balsamic vinaigrette:
55ml (1/4 cup) extra virgin olive oil
30ml (2 tbsp) balsamic vinegar
1 tsp Dijon mustard
Salt and pepper
Instructions:
Beetroots, oranges and salad leaves are sources of carotenoids, substances found in fruit and vegs responsible for their bright red, yellow, orange and purple colours. Carotenoids act as a type of antioxidant for humans and have also been linked with a reduced breast cancer risk, especially when you eat lots of them.
Beetroots are also non-starchy; this group of vegetables may help decrease the risk of developing breast cancer.
