Brighten up your January with our colourful and nutritious Beetroot, Orange and Goat Cheese Salad.
Enjoy seasonal beetroot, juicy oranges and creamy goat cheese in this vibrant salad that’s as nourishing as it is delicious. Perfect for a light lunch or as a stunning starter, this recipe will give you a fresh and healthy start to 2025.

Preparation time: 15 minutes
Ingredients:
4 beetroots – cooked, peeled and sliced (or julienne cut)
3 oranges – peeled and sliced
100g goat cheese – crumbled
200g mixed leaf salad – washed
45g (1/3 cup) pine nuts
For the balsamic vinaigrette:
55ml (1/4 cup) extra virgin olive oil
30ml (2 tbsp) balsamic vinegar
1 tsp Dijon mustard
Salt and pepper
Instructions:
- If using raw beets – prepare by removing any dirt under running water, slicing the top and bottom off, and placing them in a large saucepan, covered in water. Bring the water to a boil, and boil for 20-30 minutes – they are ready when they can be easily pierced with a fork. Remove from heat, take out of the hot water, and let cool. Peel them.
- Prepare the beetroots, oranges, goats’ cheese and mixed salad leaves, and add them to a large salad bowl with the pine nuts.
- In a sealable glass jar, add all the vinaigrette ingredients and shake/stir until well combined.
- Pour the dressing onto the salad and toss to coat.
- Serve and enjoy!

Beetroots, oranges and salad leaves are sources of carotenoids, substances found in fruit and vegs responsible for their bright red, yellow, orange and purple colours. Carotenoids act as a type of antioxidant for humans and have also been linked with a reduced breast cancer risk, especially when you eat lots of them.
Beetroots are also non-starchy; this group of vegetables may help decrease the risk of developing breast cancer.
