Breakfast quesadillas are a delicious and satisfying way to start your morning. The crispy tortilla shell adds a nice crunch to the creamy filling, making for a perfect breakfast treat. Customize this recipe with your favorite ingredients like salsa, avocado, or veggies for a tasty twist. Enjoy this easy and flavorful breakfast quesadilla recipe to kickstart your day.

Ingredients:  

2 eggs

1 garlic clove – minced

½ courgette – chopped small

225g (1 cup) spinach

1 tbsp olive oil

100g (½ cup) grated mozzarella

2 wholemeal tortilla wraps

Salt and pepper

Instructions

  1. In a large pan, heat the olive oil on medium heat. Add the garlic, courgettes, spinach, and sauté for about 3-4 minutes, or until the courgettes begin to soften.
  2. In a bowl, crack and beat the eggs with salt and pepper. Pour eggs into the pan, and scramble with the vegetables using a spatula for around 2-3 minutes.
  3. Place the tortilla wraps on large plates. Transfer half the scrambled eggs onto one side of the tortilla wraps, top with cheese and fold the tortilla wrap in half. Repeat for the second tortilla.
  4. Place the tortilla back on the pan and cook both sides until golden brown (around 1-2 minutes on each side). Repeat for the second tortilla.
  5. Transfer to a cutting board or plate, cut in half and enjoy!

Eggs are a healthy source of protein. Protein is an important part of a balanced diet and is key to building and maintaining all types of body tissue, including muscle. 

Courgettes and spinach are non-starchy vegetables that are rich in carotenoids. Eating non-starchy vegetables and carotenoid-rich vegetables may decrease the risk of breast cancer.
