Ingredients:
2 eggs
1 garlic clove – minced
½ courgette – chopped small
225g (1 cup) spinach
1 tbsp olive oil
100g (½ cup) grated mozzarella
2 wholemeal tortilla wraps
Salt and pepper
Instructions
- In a large pan, heat the olive oil on medium heat. Add the garlic, courgettes, spinach, and sauté for about 3-4 minutes, or until the courgettes begin to soften.
- In a bowl, crack and beat the eggs with salt and pepper. Pour eggs into the pan, and scramble with the vegetables using a spatula for around 2-3 minutes.
- Place the tortilla wraps on large plates. Transfer half the scrambled eggs onto one side of the tortilla wraps, top with cheese and fold the tortilla wrap in half. Repeat for the second tortilla.
- Place the tortilla back on the pan and cook both sides until golden brown (around 1-2 minutes on each side). Repeat for the second tortilla.
- Transfer to a cutting board or plate, cut in half and enjoy!
