For lots of us, the holidays aren’t complete without a cheeseboard. But this December, try enjoying one of the classic Christmas combos in a new way, with our Brie and Cranberry Tart! Golden pastry, creamy brie and tangy cranberry sauce come together for a festive treat that can be enjoyed as a snack or seasonal centrepiece for your holiday gatherings.

Preparation time: 45 minutes
Ingredients:
500g puff pastry block (try avoiding the rolled sheet as they often come with greaseproof paper)
Wholemeal flour – for dusting
1 egg – beaten
200g (½ cup) cranberry sauce
1 ½ tbsp balsamic vinegar
200g brie – sliced into 0.5 cm-thick rectangles
40g (1/3 cup) roasted pecans or walnuts – roughly chopped
2 tsp dried mixed herbs

Instructions:
- Preheat the oven to 200°C/ 180°C Fan/ Gas mark 6.
- Lightly flour your work surface. Roll the puff pastry out to form a rectangle with a thickness of about 5mm.
- Carefully transfer the puff pastry to a lightly oiled baking tray (where possible, avoid non-stick cookware). Fold in the edges of the pastry to form a border and gently pierce all over the inner part of the puff pastry with a fork. Brush both the inner portion and the border with the beaten egg.
- In a small bowl, mix the cranberry sauce and the balsamic vinegar. Spread the mixture on the pastry inside border.
- Lay brie slices in a single layer on top of the cranberry mix.
- Sprinkle the chopped pecans or walnuts, mixed herbs and pepper over the brie.
- Bake for 20-25 minutes until the pastry is golden brown and the brie has melted.
- Leave to cool for 5-10 minutes, and serve warm.
