If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. 1 tsp olive oil
Handful of mushrooms (button or chestnut) – washed and sliced
25g (1/4 cup) grated cheddar (or plant-based) cheese
Handful of spinach
2 eggs
Salt and pepper
Why this is good for you
Eggs and mushrooms are a healthy source of protein. Protein is an important part of a balanced diet and is key to building and maintaining all types of body tissue, including muscle.
Spinach is a non-starchy vegetable and is rich in carotenoids. Not only is there strong evidence that a diet rich in vegetables and fruits can help to reduce breast cancer risk but eating non-starchy vegetables and carotenoid-rich vegetables may also decrease the risk of breast cancer.
