Whip up a quick and delicious Courgette and Cheese Frittata with this easy recipe! Perfect for brunch, lunch or a light dinner – packed with flavour and ready in 30 minutes.

4 portions

Preparation time: 30 minutes

Ingredients:  

6 eggs

75g (¾ cup) mature Cheddar cheese – grated

A pinch-dried chilli flakes

2 tbsp olive oil

1 onion – chopped

3 (500g) courgettes – halved lengthwise and sliced

Salt and pepper

Instructions:

  1. Preheat the oven to 220°C.
  2. In a medium bowl, whisk together the eggs and cheese, and season to taste with chilli flakes, salt and pepper. Set aside.
  3. Heat the olive oil in a large frying pan (where possible, avoid using non-stick cookware). Add the onions, and saute for a couple of minutes. Add the courgettes and cook for a further 5 minutes, stirring.
  4. Add the courgettes and onions to a lightly oiled round glass oven dish. Pour the egg mixture over the courgettes. Bake for 20-25 minutes until the egg has set.
  5. Allow to cool for 10 minutes.
  6. Serve with side salad.

Courgettes are non-starchy vegetables that are rich in carotenoids. Eating non-starchy vegetables and carotenoid-rich vegetables may decrease the risk of breast cancer.

Eggs are a healthy source of protein. Protein is an important part of a balanced diet and is key to building and maintaining all types of body tissue, including muscle.
