Ingredients:
6 eggs
75g (¾ cup) mature Cheddar cheese – grated
A pinch-dried chilli flakes
2 tbsp olive oil
1 onion – chopped
3 (500g) courgettes – halved lengthwise and sliced
Salt and pepper
Courgettes are non-starchy vegetables that are rich in carotenoids. Eating non-starchy vegetables and carotenoid-rich vegetables may decrease the risk of breast cancer.
Eggs are a healthy source of protein. Protein is an important part of a balanced diet and is key to building and maintaining all types of body tissue, including muscle.
