If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. We know that certain pesticides are linked to breast cancer risk, so we recommend eating organic food whenever possible. Read more on pesticides here.
2 medium leeks
700g potatoes – around 3 potatoes
1 onion
3 garlic cloves
2 tbsp olive oil
1 litre vegetable stock
Salt and pepper
Leeks are non-starchy vegetables. A diet rich in vegetables and fruits can help reduce breast cancer risk, and non-starchy vegetables may also decrease the risk of oestrogen-receptor-negative breast cancer.
