Gazpacho is a refreshing and chilled soup made with a blend of fresh tomatoes, cucumbers, bell peppers, onions and garlic. It’s perfect for hot summer days and can be served as an appetizer or light meal.

If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. Ingredients:  

1 red bell pepper 

6 large tomatoes 

1 cucumber 

2 garlic cloves 

3 tbsp balsamic vinegar

1 onion 

4 tbsp extra virgin olive oil, plus more for drizzling 

Salt and pepper 

Instructions

  1. Blanch and peel the tomatoes and red pepper – mark a small “X” on the bottom and gently put them in a pot of boiling water for about 40 seconds, then take them out, let them cool down (preferably in ice water), and then easily peel the skin off and discard.  
  2. Remove the seeds from the tomatoes and bell pepper, and chop into chunks. 
  3. Peel the cucumber, cut in half lengthwise, remove the seeds, and cut into chunks. 
  4. Chop the onion and the garlic cloves. 
  5. Transfer the tomatoes, bell pepper, cucumber, onion, garlic, vinegar, olive oil, salt and pepper to a blender. Blend until smooth. 
  6. Season to taste and put in the refrigerator for at least an hour to chill. 
  7. Serve the soup with a drizzle of olive oil and freshly ground black pepper. 

Why Gazpacho is good for you  

Tomatoes and bell peppers are a good source of carotenoids, which are substances found in fruits and vegetables that give them their bright red, yellow, orange and purple colours. Carotenoids can act as a type of antioxidant and may be associated with a reduced risk of breast cancer.
