Gazpacho is a refreshing and chilled soup made with a blend of fresh tomatoes, cucumbers, bell peppers, onions and garlic. It’s perfect for hot summer days and can be served as an appetizer or light meal.

Ingredients:
1 red bell pepper
6 large tomatoes
1 cucumber
2 garlic cloves
3 tbsp balsamic vinegar
1 onion
4 tbsp extra virgin olive oil, plus more for drizzling
Salt and pepper
Instructions
- Blanch and peel the tomatoes and red pepper – mark a small “X” on the bottom and gently put them in a pot of boiling water for about 40 seconds, then take them out, let them cool down (preferably in ice water), and then easily peel the skin off and discard.
- Remove the seeds from the tomatoes and bell pepper, and chop into chunks.
- Peel the cucumber, cut in half lengthwise, remove the seeds, and cut into chunks.
- Chop the onion and the garlic cloves.
- Transfer the tomatoes, bell pepper, cucumber, onion, garlic, vinegar, olive oil, salt and pepper to a blender. Blend until smooth.
- Season to taste and put in the refrigerator for at least an hour to chill.
- Serve the soup with a drizzle of olive oil and freshly ground black pepper.
Why Gazpacho is good for you
Tomatoes and bell peppers are a good source of carotenoids, which are substances found in fruits and vegetables that give them their bright red, yellow, orange and purple colours. Carotenoids can act as a type of antioxidant and may be associated with a reduced risk of breast cancer.
