Ingredients:
400g green beans
1tbsp olive oil
½ tsp Dijon mustard
Juice from half a lemon
100g light Greek feta – crumbled
50g (1/3 cup) almonds – roughly chopped
Salt and pepper
Green beans contain carotenoids; substances found in fruits and vegetables that are responsible for their bright colours. Carotenoids have been linked with a reduced breast cancer risk, especially when you eat lots of them.
