Grilled aubergine rolls are a delightful and savoury appetiser that will impress your guests. The smokey flavour of the grilled aubergine pairs perfectly with the creamy filling. So, whether you’re hosting a dinner party or simply looking for a delicious snack, these grilled aubergine rolls will surely be a hit.

Ingredients:
2 aubergines – sliced lengthways
Olive oil – for brushing
Juice of 1 lemon
12-15 fresh basil leaves – finely chopped
200g light Greek feta – crumbled
Salt and pepper
Optional: 1 red chilli – deseeded and finely chopped
Cocktail sticks
Instructions
- Slice the aubergines lengthways into around 10 slices each (the 2 outside slices may be difficult to use as rolls, but they can also be grilled and eaten).
- Heat a large pan (where possible, avoid non-stick cookware). Brush both sides of the aubergine slices with olive oil and cook for a few minutes on each side or until lightly coloured. Set aside to cool.
- In a bowl, add the lemon juice, chopped basil leaves, and optionally the red chilli for some spiciness. Season with salt and pepper to taste and mix well. Stir in the crumbled Greek feta.
- Lay an aubergine slice out flat. Place a spoonful of the feta mixture on the end of each slice of aubergine, then roll up. Secure with a cocktail stick.
- Place aubergine rolls on a plate and serve.
