Craving some seasonal spice? Pumpkin Spiced Lattes are often a firm autumn favourite, but have you ever tried a Spiced Pear Chia Pudding?

Perfect for a quick breakfast or a healthy snack, this dish combines juicy pears with warming spices to provide a flavoursome source of fibre that’ll fuel your day. With just a few simple ingredients, this is the perfect autumnal treat.

Preparation time: 15 minutes

Refrigeration time: 4 hours – overnight

If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. We know that certain pesticides are linked to breast cancer risk, so we recommend eating organic food whenever possible. Read more on pesticides here.

Ingredients:  

For chia pudding:

120 ml (½ cup) milk of choice

120 ml (½ cup) yoghurt of choice

2 tablespoons chia seeds

For Spiced Pear topping:

1 pear – cored and diced

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp ground ginger

½ tbsp brown sugar

½ tbsp water

Other toppings:

1 handful of nuts/seeds of choice (almonds, pumpkin seeds, etc.)

Instructions:

For the chia pudding:

  1. In a bowl or sealable container, mix the milk, yoghurt and chia seeds.
  2. Cover or seal the container and place it in the fridge for 4 hours or overnight.

For the Spiced Pear topping:

  1. In a saucepan (where possible, avoid non-stick cookware), add the diced pears, cinnamon, nutmeg, ginger, brown sugar and water. Mix with a wooden spoon.
  2. Put the saucepan on medium heat, and cook for a few minutes, until soft, stirring occasionally.

When the chia pudding is ready…

  1. Give the chia pudding a good mix, breaking apart any clumps.
  2. Spoon into a bowl or keep in the container and top with spiced pears and a handful of nuts of your choosing.
  3. Enjoy!

Chia seeds and pears are high in fibre. Studies have shown that a diet high in fibre is associated with a decreased breast cancer risk.
