Ingredients:
2 tbsp olive oil
1 onion – thinly sliced
2-3 garlic cloves – finely chopped or crushed
½ tsp smoked paprika
250g spinach
200g spring greens – sliced
3 tbsp crème fraiche
2 tsp Dijon mustard
4 eggs
Salt and pepper
To serve: Wholemeal toast

Spinach and spring greens are non-starchy vegetables that are rich in carotenoids. Eating non-starchy vegetables and carotenoid-rich vegetables may decrease the risk of breast cancer.
Eggs are a healthy source of protein. Protein is an important part of a balanced diet and is key to building and maintaining all types of body tissue, including muscle.
