Wondering how to make delicious, family-favourites more nutritious? Packed with fibre, antioxidants and essential nutrients that can help reduce the risk of breast cancer, our Sweet Potato, Lentil, Avocado and Chipotle Sauce Tacos are bursting with flavour and perfect for any occasion!

Easy to make and full of bold, smoky flavours, enjoy these fresh for a comforting, week-night meal or prep the ingredients beforehand for a quick, nutritious lunch. However you enjoy them, they’re a simple step toward healthier eating!

Preparation time: 40 minutes

Ingredients:  

For the sweet potatoes:

4 medium-sized sweet potatoes – scrubbed and cut into chunks

2 tbsp olive oil

Salt and pepper

For the seasoned lentils:

1 tbsp olive oil

1 onion – diced

2 garlic clove – crushed

2 tbsp tomato paste

½ tsp ground cumin

½ tsp ground coriander

200g (1 cup) dry lentils of choice

450ml (2 cups) water

For the other fillings:

1 avocado – thinly sliced

50g reduced-fat grated Cheddar cheese

80g iceberg lettuce – sliced

8 wholemeal tortilla warps

For the Chipotle sauce:

1/3 cup mayonnaise

2 tbsp lime juice

2 tbsp chipotle hot sauce

Instructions:

  1. Preheat the oven to 200°C/ 180°C Fan/ Gas mark 6. Scatter the pieces of sweet potatoes on an oven-proof dish (where possible, avoid using non-stick cookware), toss with 2 tbsp olive oil and season with salt and pepper. Roast for around 30-40 minutes, tossing halfway, until tender. Remove from the oven.
  2. In the meantime, prepare the lentils: heat the oil in a pot (where possible, avoid non-stick cookware) over a medium-high heat. Add the onion and garlic, and cook for about 5 minutes, until softened. Add the tomato paste, cumin and coriander. Cook for another minute, stirring. Add the lentils and the water. Bring to a rumbling simmer, then lower heat to a gentle simmer. Cook for about 20-30 minutes, until the lentils are tender and cooked through. Cover and set aside.
  3. Prepare the other taco filling ingredients. Prepare the chipotle sauce by whisking all the ingredients in a bowl.
  4. Assemble your tacos: Heat the tortillas according to packet instructions. Put some of the lentil mixture and sweet potatoes on one side of the tortillas. Add 2 slices of avocado. Sprinkle on some cheese and lettuce. And drizzle some chipotle sauce on top. Fold over the other half of the tortilla and repeat for the rest of the tortillas. You can also get creative and add any other toppings you like.
  5. Serve immediately.

Why is this good for you ?

Wholemeal wraps have a higher fibre content than white tortilla wraps. A diet high in fibre is associated with a decreased breast cancer risk.

Sweet potatoes contain carotenoids that act as antioxidants for humans and may help to reduce the risk of breast cancer. Sweet potatoes are also high in fibre; a high-fibre diet is associated with a reduced risk of breast cancer.
