Busy day? Let the oven do the work this evening with our Vegetable & Halloumi Traybake.

Packed with colourful roasted veggies, golden halloumi, and heaps of flavour, this fuss-free meal brings minimal effort and maximum deliciousness! Simply chop, season, roast and enjoy.

4 portions

Preparation time: 30 minutes

Ingredients:  

10 new/baby potatoes – cut into chunks

2 red pepper – stalks removed, deseeded and roughly sliced

2 courgettes – cut into small chunks

300g cherry tomatoes

1 red onion – sliced

3 garlic cloves – chopped

3 tbsp olive oil

2 tsp mixed herbs – e.g. thyme, rosemary and parsley

Salt and pepper

250g halloumi – sliced

2 tbsp green pesto

A handful of basil leaves

Instructions:

  1. Preheat your oven to 200°C/fan 180°C/gas 6.
  2. Wash and prepare the vegetables.
  3. In a bowl, toss the potatoes, red peppers, courgettes, cherry tomatoes, red onion, and garlic with the olive oil, herbs, salt, and pepper.
  4. Arrange them on a lightly greased baking tray (where possible, avoid using non-stick cookware) and cook them in the oven for 20 minutes.
  5. Add the sliced halloumi on top of the vegetables.
  6. Return to the oven for a further 10-15 minutes or until the halloumi is golden brown and the vegetables are cooked through.
  7. Serve with the green pesto and scatter some basil leaves.

Why is this Vegetable and Halloumi Traybake good for you ?

Halloumi is a great alternative to red meat and contributes to protein and calcium intake. Although high in calories and salt, it is okay to eat halloumi in moderation as part of a balanced, healthy diet.

Studies suggest that a diet rich in fruits and vegetables could help reduce the risk of breast cancer. This recipe contains peppers, courgettes, tomatoes and onions, all contributing to your 5-a-day.
