Looking for a light and healthy way to enjoy your greens in warm weather? Packed with colour and crunch, our Green Beans, Almonds and Feta Summer Salad is full of flavour, rich in nutrients and simple to make.

Side dish

Portions: 4

Preparation time: 15 minutes

Ingredients:  

400g green beans

1tbsp olive oil

½ tsp Dijon mustard

Juice from half a lemon

100g light Greek feta – crumbled

50g (1/3 cup) almonds – roughly chopped

Salt and pepper

Instructions:

  1. Bring a medium saucepan of water to a boil (where possible, avoid non-stick cookware).
  2. Add the green beans and cook for 3-4 minutes until tender. Drain in a strainer and run under cold water to stop the cooking process.
  3. In a sealable glass jar, add the olive oil, Dijon mustard, lemon juice and salt and pepper. Shake/stir until well combined.
  4. In a serving bowl or on a platter, add the green beans, and drizzle the seasoning. Toss lightly to coat. Top with crumbled feta and chopped almonds.
  5. Serve and enjoy!

Why is this good for you ?

Green beans contain carotenoids; substances found in fruits and vegetables that are responsible for their bright colours. Carotenoids have been linked with a reduced breast cancer risk, especially when you eat lots of them.
