It is indeed possible to make healthier pancakes, and if that wasn’t enough to put a smile on your face, they can be made with just four ingredients! The simple things in life really are the best.

Serves: 2 (6 small pancakes)

Preparation time: 15 minutes 

If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. We know that certain pesticides are linked to breast cancer risk, so we recommend eating organic food whenever possible. Read more on pesticides here.

Ingredients:  

45 g (½ cup) rolled or quick oats 

2 ripe bananas – mashed 

2 eggs 

½ tsp baking powder 

 

Vegetable oil for cooking 

Instructions

  • In a blender, blend the oats until like flour (less than a minute).
  • Add bananas, eggs, and baking powder to the blender, and blend until you have a smooth batter.
  • Let sit for about 10 minutes to thicken.
  • Heat a pan (where possible, avoid using non-stick cookware) and add some oil.
  • Add around 2 spoonfuls of batter per pancake, cooking each side for a few minutes.
  • Serve with desired toppings: nut butter, fresh berries, chopped nuts, etc.

Why this is good for you  

Oats are a great source of fibre and nutrients; adopting a high-fibre diet can help you feel fuller for longer and is also associated with a decreased risk of breast cancer.

These healthy pancakes are made without added sugar. The World Health Organisation (WHO) recommends limiting our intake of added sugar to reduce the risk of unhealthy weight gain and tooth decay. Being obese or overweight also increases breast cancer risk in men and postmenopausal women.
