Whether as a dish at a barbeque or side for your family dinner, these garlic and herb roasted new potatoes will be your go-to easy potatoes with a summer kick.

Serves: 6

Preparation time: 40 minutes

If you can, use organic ingredients for this recipe. Although we are unsure whether eating organic food reduces breast cancer risk, organic food contains less pesticide residue. Ingredients:  

1kg new potatoes – halved 

2 tbsp olive oil 

5 garlic cloves – minced 

3 sprigs fresh rosemary 

15g parsley – chopped 

10g mint – chopped 

Salt and pepper 

Instructions

  • Preheat the oven to 220°C. 
  • Wash and scrub the potatoes then halve them.  
  • In a large bowl, add the potatoes, olive oil, minced garlic, and rosemary. Season with salt and pepper. Toss to evenly coat.  
  • Scatter the content of the bowl across an oven-proof dish (where possible, avoid using non-stick cookware). 
  • Roast for 40 minutes, until golden and cooked through. 
  • Stir through the chopped parley and mint. Serve as a side dish.
