4x 200ml portions
Preparation time: 1 hour 30 minutes
Ingredients:
500g tomatoes – skin removed (see how below) and roughly chopped
4 (300g) apples – peeled, cored and roughly chopped
2 tbsp olive oil
1 onion – thinly chopped
1 red chilli – finely chopped
2 garlic cloves – crushed
1 tsp ground mixed spice
1 tsp ground cumin
150ml (2/3 cup) apple cider vinegar
1 tsp mild curry powder
100ml (½ cup) water
70g (1/3 cup) sugar – optional
Salt and Pepper
*You will need to sterilise the glass jars used to store the chutney by boiling them in a large pot of water before using.
Tomatoes and chillies are rich in carotenoids, a plant compound responsible for certain fruits and vegetables’ bright red, yellow, orange and purple colours. Carotenoids act as antioxidants for humans and may help to reduce the risk of breast cancer.
Fruits and vegetables are rich in fibre; a high-fibre diet is associated with a reduced risk of breast cancer.
