Our Healthy Carrot and Cheese Flan recipe proves that eating well can be delicious AND nutritious. This simple dish combines wholesome ingredients with great taste to create a recipe that’s easy to make, and even easier to enjoy.

 

Portions: 4

Preparation time: 45 minutes

Ingredients:  

200g carrots – washed and diced

2 eggs

180ml (3/4 cup) single cream

20g (1 and ½ tbsp) butter – melted

50g (1/2 cup) parmesan

1 pinch of nutmeg

Salt and Pepper

A bit of olive oil to grease ramekins

Parsley leaves – for decoration

Equipment: blender and 4 ramekins

Instructions:

  1. Preheat your oven to 170°C/150°C fan/gas mark 3.
  2. Bring a pot of water to a boil and cook the carrots for 15-20 minutes.
  3. Drain the carrots and add them to a blender. Add the eggs, single cream, melted butter, parmesan, nutmeg, salt and pepper. Puree until smooth.
  4. Grease the inside of the 4 ramekins. Transfer the pureed carrot and cheese mixture to the ramekins.
  5. Bake in the oven for around 15 minutes. Let sit for 5 minutes before serving.
  6. Serve with parsley leaves.

Why is this good for you ?

Carrots and onions are non-starchy; this group of vegetables may help decrease the risk of developing breast cancer.

Carrots are also rich in carotenoids, which act as antioxidants for humans and may reduce the risk of breast cancer, especially when you eat lots of them!
