Ingredients:
2 aubergines – cut into 1cm slices
4 tbsp olive oil
2 cloves of garlic – finely chopped
250 g cherry tomatoes – quartered
2 mozzarella balls – drained and torn
Fresh basil
Salt and pepper
Aubergines are non-starchy vegetables; this group of vegetables may help decrease the risk of developing breast cancer.
Tomatoes are a good source of carotenoids, which give fruits and vegetables their bright red, yellow, orange and purple colours. Carotenoids can act as a type of antioxidant and may be associated with a reduced risk of breast cancer.
