Summer is the perfect time to embrace lighter, healthier meals – and our healthy Mini Aubergine Pizza recipe is the perfect nutritious swap for a comfort food classic.

Packed with flavour and goodness, these bite-sized treats are ideal for warm-weather lunches, jazzing up family barbecues or even as a colourful party snack.

 

Portions: 4

Preparation time: 30 minutes

Ingredients:  

2 aubergines – cut into 1cm slices

4 tbsp olive oil

2 cloves of garlic – finely chopped

250 g cherry tomatoes – quartered

2 mozzarella balls – drained and torn

Fresh basil

Salt and pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. Place the aubergine slices on a baking tray (where possible, avoid non-stick cookware).
  3. In a small bowl, mix the finely chopped garlic with the olive oil, and some salt and pepper. Spread the oil mixture onto the aubergine slices.
  4. Bake in the oven for around 20 minutes, or until golden.
  5. Take the aubergine slices out of the oven and distribute the cherry tomatoes and mozzarella on the aubergine slices. Return to the oven for another 5-8 minutes, until the mozzarella melts.
  6. To serve, garnish with a few fresh basil leaves.

Why is this good for you ?

Aubergines are non-starchy vegetables; this group of vegetables may help decrease the risk of developing breast cancer.

Tomatoes are a good source of carotenoids, which give fruits and vegetables their bright red, yellow, orange and purple colours. Carotenoids can act as a type of antioxidant and may be associated with a reduced risk of breast cancer.
