Ingredients:
1 head of cauliflower – leaves removed, stalks trimmed, and cut into florets
A bunch of fresh coriander – stalks removed and chopped
25g (¼ cup) pistachio nuts – de-shelled and chopped
35g (¼ cup) pine nuts
30g (¼ cup) dried cranberries
1 pomegranate – de-seeded
For dressing:
55ml (1/4 cup) extra virgin olive oil
Juice from ½ lemon
1 clove garlic – crushed
A pinch of ground cumin
Salt and pepper
Cauliflower is a cruciferous vegetable naturally high in fibre and B vitamins. A higher intake of cruciferous vegetables may reduce the risk of breast cancer.
