If you’re looking for something tasty and fuss-free, our Healthy Cauliflower Couscous Recipe is just the thing! This nourishing alternative to traditional couscous is a quick and easy way to add more veg to your diet – perfect for speedy lunches or simple dinners after a busy day.

 

Portions: 4

Preparation time: 15 minutes

Ingredients:  

1 head of cauliflower – leaves removed, stalks trimmed, and cut into florets

A bunch of fresh coriander – stalks removed and chopped

25g (¼ cup) pistachio nuts – de-shelled and chopped

35g (¼ cup) pine nuts

30g (¼ cup) dried cranberries

1 pomegranate – de-seeded

For dressing:

55ml (1/4 cup) extra virgin olive oil

Juice from ½ lemon

1 clove garlic – crushed

A pinch of ground cumin

Salt and pepper

Instructions:

  1. Clean the cauliflower. There are 2 options to prepare the raw cauliflower: using a large cheese grater, grate all the cauliflower or using a food processor, pulse the cauliflower until finely chopped (preferably in batches).
  2. In a large salad bowl, add the cauliflower, coriander, pistachio nuts, pine nuts, cranberries and pomegranate seeds. Mix well.
  3. In a sealable glass jar, add all the dressing ingredients (olive oil, lemon juice, garlic, cumin, salt and pepper) and shake/stir until well combined.
  4. Pour the dressing over the salad and gently toss until well combined.
  5. Serve and enjoy.

Why is this good for you ?

Cauliflower is a cruciferous vegetable naturally high in fibre and B vitamins. A higher intake of cruciferous vegetables may reduce the risk of breast cancer.
