Our Christmas Cranberry Brie Pistachio Baguette is a delicious and healthy take on a seasonal classic. It combines creamy brie, tangy cranberry sauce, and crunchy pistachios, all layered on a warm, wholewheat baguette. It’s perfect for a quick festive lunch or a light meal to enjoy by the fire.

Ingredients
- 1 wholewheat baguette
- 1 small avocado, mashed
- A few slices of mild Brie cheese
- 1-2 tbsp cranberry sauce (homemade or bought)
- 1 handful of rocket
- 1 tbsp pistachios
How to make it:
- Prep the baguette: Toast your baguette in the oven or toaster until it’s warm and crispy. Once done, cut it in half.
- Layer the ingredients: Spread the avocado evenly on the bottom half of the baguette. Place the Brie slices on top of the avocado, followed by the cranberry sauce.
- Finish & serve: Spread the rocket over the cranberry sauce and sprinkle with pistachios. Place the other half of the baguette on top and enjoy immediately.
