Preparation time: 15 minutes
Ingredients:
- 45 g (½ cup) rolled or quick oats
- 2 ripe bananas – mashed
- 2 eggs
- ½ tsp baking powder
- Vegetable oil for cooking
How to make it:
- Process oats: in a blender, blend the oats until they resemble flour (less than a minute).
- Make batter: add the bananas, eggs, and baking powder to the blender, and blend until you have a smooth batter.
- Rest: let the batter sit for about 10 minutes to thicken.
- Cook: heat a pan and add some oil. Add around 2 spoonfuls of batter per pancake, cooking each side for a few minutes until golden brown.
- Serve: serve with desired toppings, such as nut butter, fresh berries, chopped nuts.
