Ingredients
- 1 mango – stone removed, peeled and cubed
- 2 avocados – stones removed, peeled and cubed
- 1 cucumber – washed and diced
- 300g (2 cups) cherry tomatoes – halved
- Juice from 1 lemon
- 2-3 tbsp extra virgin olive oil
- Salt and pepper
- Fresh parsley – chopped
- Fresh chives – chopped
How to make it:
- Combine ingredients: in a bowl, add the mango, avocados, cucumber, and cherry tomatoes.
- Add dressing: squeeze in the lemon juice, add the olive oil, salt, and pepper.
- Garnish and mix: top with fresh parsley and chives. Toss to mix well.
- To serve: enjoy by itself or serve as a side dish.
