This roasted cauliflower steak recipe is a masterclass in simplicity and plant-based flavour. Naturally rich in fibre and B vitamins, cauliflower is a powerhouse vegetable worth adding to your weekly rotation.

Ingredients:
- 1 large cauliflower
- 5 tbsp olive oil
- 2 tsp paprika
- 1 tsp ground coriander
- 1 tsp garlic powder
- Salt and pepper
How to make it:
- Preheat the oven to 200°C.
- Remove the outer leaves from the cauliflower and cut the bottom stem so the cauliflower can sit flat on your cutting board.
- Cut the cauliflower into 4 to 6 thick slices (3-4 cm thick) to form steaks.
- Place the steaks and florets onto a lightly greased baking sheet (where possible, avoid using non-stick cookware).
- In a small bowl, mix the olive oil, paprika, ground coriander and garlic powder. Brush the cauliflower with the mixture on both sides. Season with salt and pepper.
- Bake in the oven for 15 minutes, then gently flip the cauliflower steaks over and bake for another 15 minutes or until they turn golden.
- Remove from the oven and serve hot.
