This hearty slow-cooker winter vegetable soup will help you stay warm this cold season. This healthy crock pot recipe is packed with vegetables, and even better, you're able to throw everything into your slow cooker in the morning and come back to a fully prepared dinner!

Cook time: 6 hours on low / 3 hours on high

How to make it:    

  1. Prep vegetables: roughly chop all your vegetables  
  2. Combine: place all the vegetables, herbs (bay leaves, oregano), passata, and diluted stock into your slow cooker. 
  3. Cook: set the slow cooker to low for 6 hours or high for 3 hours. Stir halfway through. 
  4. Finish: check the vegetables are soft, then adjust seasoning (salt and pepper) if needed. Use a ladle to scoop the soup into bowls with a big serving of vegetables. 
  5. To serve: Sprinkle the parsley and grated cheese on top and drizzle with a little extra virgin olive oil. Serve with your desired sliced bread.
