Ingredients:
- 1 large leek – sliced (see below how to prepare)
- 2 carrots – diced
- 1 onion - diced
- 1 tbsp olive oil
- 50g finely grated cheddar cheese
- 1 tsp dried thyme
- 4 pieces hake fillet (approx. 100-115g each)
- Salt and Pepper
How to make it:
- Preheat your oven to 180°C/160°C fan/gas mark 4.
- Prepare the leek by removing the outer leaves, washing thoroughly to remove any dirt or grit, and slicing into thin rounds. Dice the carrots and the onion.
- Heat the olive oil in a pan (where possible, avoid non-stick cookware). Add the leeks, carrots and onions, and sauté until soft, for about 3-4 minutes. Remove from the heat.
- In a bowl, mix the cheddar cheese with the thyme.
- Place the hake fillets in a lightly greased glass oven dish. Spoon over the leek, carrots and onions. Top with the cheese and thyme mixtures.
- Bake in the preheated oven for 25 minutes, until the fish is cooked through, and the cheddar topping begins to brown.
- Remove from oven and serve.

Hake fillet is a lighter alternative to cod. Fish is high in protein and omega-3 fatty acids which makes it a great alternative to meat, especially since processed meat could increase breast cancer risk. We recommend choosing organic or Aquaculture Stewardship Council (ASC) hake to avoid pesticides.
