Ingredients:
- 1 large aubergine – cut into chunks
- 2 courgettes – sliced
- 1 red pepper – deseeded and chopped into bite-size chunks
- 1 yellow pepper - deseeded and chopped into bite-size chunks
- 3 large tomatoes - cubed
- 1 onion – peeled and sliced
- 3 garlic cloves – peeled and crushed
- 3 tbsp olive oil
- Salt and pepper
- Bouquet garni
How to make it:
- Preheat the oven to 200°C.
- Wash and prepare the vegetables (aubergine, courgettes, peppers, tomatoes, onion and garlic).
- In a large glass oven-proof dish, add the aubergine, courgettes, peppers, tomatoes, onion and garlic. Drizzle the olive oil on top, season with salt and pepper, and mix to coat evenly. Add the bouquet garni.
- Place in the oven and cook for 45-55 minutes, or until the vegetables are all very tender. Stir occasionally to ensure even cooking.
- Remove from the oven and remove bouquet garni.
- Serve warm.

Tomatoes are rich in the carotenoid lycopene. Carotenoids are substances found in fruits and vegetables that are responsible for their bright colours. They have also been linked with a reduced breast cancer risk, especially when you eat lots of them. Lycopene is fat-soluble, so olive oil will help you absorb it better.
