Who says salads are just for summer? Here's a salad that celebrates the seasonal produce that autumn has to offer.
Our Roasted Sweet Potato, Feta and Pumpkin Seed Salad combines tender sweet potatoes, creamy feta and crunchy pumpkin seeds with a rich tahini dressing. Loaded with carotenoids that can contribute to a reduced breast cancer risk and simple to assemble, it makes a delicious addition to your autumn meal plan - whether enjoyed as a side dish, healthy lunch or the easy dinner.

Ingredients:
- 2 sweet potatoes – cubed
- 2 tbsp olive oil
- 2 little gem or sweet gem lettuce - washed
- 100g (1/3 cup) light Greek feta – crumbled
- 75g (½ cup) pumpkin seeds
- Salt and pepper
For the tahini dressing:
- 55ml (¼ cup) smooth tahini
- Juice from 1 lemon
- 3 tbsp olive oil
- 1 garlic clove – grated
- 1 tsp Dijon mustard
- Salt and pepper
How to make it:
- Pre-heat the oven to 210°C/ 190°C Fan/ Gas mark 7.
- Scatter the pieces of sweet potato on an oven-proof dish (where possible, avoid using non-stick cookware), toss with 2 tbsp olive oil and season with salt and pepper. Roast for around 25-30 minutes, until tender. Remove from the oven.
- In the meantime, prepare the tahini dressing. In a sealable glass jar, add all the dressing ingredients and shake/stir until well combined.
- In a large salad bowl, add the lettuce, sweet potatoes and crumbled feta. Pour the tahini dressing and toss to coat. Top with the pumpkin seeds.
- Serve and enjoy!
